This medium-bodied Pinot Noir from Eden Valley is seductively savoury, featuring vibrant red cherry and berry flavours, with a hint of spice. The Maitre d' Pinot Noir is a refreshing welcome from Eden Valley. This wine shows elegance and vibrant textures, whilst its refreshing acidity with subtle notes of French oak complements silky tannins that linger on the palate for an effortless finish.
The Ciel Head Chef Shiraz has been sourced from 100-year-old Shiraz vines from Halletts Valley, a small sub region within the Barossa Valley. The Head Chef has been carefully refined using a mix of 15% New French and American oak to give balance, texture and flavour.
The fruit is basket pressed and then naturally fermented using Indigenous yeast and is hand plunged 3 times daily for 10 days. It is then placed in 15% new French Oak and American Oak and barrel fermented for 15 months maturation.
This latest vintage shows elegant fruit with streamlined tannins that offers a layered mouth feel with integrated notes of oak on the palette.

The Ciel Beurre Blanc Chardonnay is made from hand picked grapes from the Adelaide Hills. This Chardonnay was whole bunch pressed using only the best free run juice. This wine was then fermented in 100% new French Oak Puncheons. Post fermentation the wine remained in oak on lees for 6 months with the lees stirred weekly to build character and depth.
A blonde with a touch of French (oak) allows the purity of nectarine and peach aromas to permeate in this Chardonnay. She has a naturally uplifting feel with her well rounded, citrusy personality. A creamy well rounded finish with an alluring natural acidity. Swirl that glass away and let her light up the room.
The Cloud Series Nimbus Chardonnay is made from hand picked grapes from a single vineyard located in the Lobethal region of the Adelaide Hills. This area is a small boutique region that is 500m above sea level and is known for its high quality wines. This boutique vineyard is comprised of soft aerated dark soils, ironstone and mica schist.
The Nimbus Chardonnay was 100% whole bunch pressed using only the best free run juice. This wine was then fermented in large format 100% new French Oak Puncheons. Post fermentation, the wine remained in oak on lees for 18 months.
This premium Chardonnay shows balanced acidity and soft elegant fruits with a coating mouth feel, it truly is both a unique and special wine.
The Ciel Yes Chef Shiraz was produced from a small parcel of shiraz vines located in the Northern part of the Barossa Valley, an area which shares boundaries with the Eden Valley.
This wine is lightly spiced yet plush, juicy and fruit forward. After being basket pressed to get the maximum fruit extraction out of the grapes it was matured in seasoned American and French oak for 14 months.
As the younger sibling to the Ciel Head Chef Shiraz, the Yes Chef Shiraz takes the Head Chef's orders to deliver a wine with light tannins and a full structure. Popping out of the glass from the Head Chef's demands, it stands tall, pushes on and doesn't argue.

The back bone, the serious one, the decision maker. The Ciel Patron is a Single Vineyard Shiraz from Stonewell in the Barossa Valley. The wine comes from 100-year-old vines and is handpicked and then crushed with 15% whole bunch. It is then rested in 50% new French Oak barrels. The proprietor “or Patron” holds a strong character, the natural leader, but maintains a level of empathy. The Patron is the Chief of the Pack, the leader of the Ciel Estate and Icon ranges.
The Patron features a richness and weight in its palette whilst display flavours of bitter chocolate and cocoa supported by streamlined tannins.

The Ciel Sous Chef Cabernet Sauvignon is produced from grapes sourced from a single vineyard in the Marananga region of the Barossa Valley.
The fruit is basket pressed and then naturally fermented using Indigenous yeast and is hand plunged 3 times daily for 10 days. It is then placed in 15% new French Oak and American Oak and barrel fermented for 15 months maturation.
Whilst being thick and juicy, it is extremely perfumed with violet notes on the nose to deliver a wine displaying characteristics of ripe blackberries and raspberries with softly integrated notes of oak on the palette.
Like its namesake, the Sous Chef Cabernet Sauvignon is the lead support in the Icon Collection of Ciel wines. The Head Chef's right hand man. Rough but refined, the Sous Chef is ready to jump out of the glass. Following in the Head Chef's steps, the hands of the Sous Chef are just as important. Bold, spontaneous, consistent, passionate.
