The Ciel Yes Chef Shiraz was produced from a small parcel of shiraz vines located in the Northern part of the Barossa Valley, an area which shares boundaries with the Eden Valley.
This wine is lightly spiced yet plush, juicy and fruit forward. After being basket pressed to get the maximum fruit extraction out of the grapes it was matured in seasoned American and French oak for 14 months.
As the younger sibling to the Ciel Head Chef Shiraz, the Yes Chef Shiraz takes the Head Chef's orders to deliver a wine with light tannins and a full structure. Popping out of the glass from the Head Chef's demands, it stands tall, pushes on and doesn't argue.

The Ciel Sous Chef Cabernet Sauvignon is produced from grapes sourced from a single vineyard in the Marananga region of the Barossa Valley.
The fruit is basket pressed and then naturally fermented using Indigenous yeast and is hand plunged 3 times daily for 10 days. It is then placed in 15% new French Oak and American Oak and barrel fermented for 15 months maturation.
Whilst being thick and juicy, it is extremely perfumed with violet notes on the nose to deliver a wine displaying characteristics of ripe blackberries and raspberries with softly integrated notes of oak on the palette.
Like its namesake, the Sous Chef Cabernet Sauvignon is the lead support in the Icon Collection of Ciel wines. The Head Chef's right hand man. Rough but refined, the Sous Chef is ready to jump out of the glass. Following in the Head Chef's steps, the hands of the Sous Chef are just as important. Bold, spontaneous, consistent, passionate.
This old vine Single Vineyard Syrah comes from old vines located within a single vineyard in the Eden Valley. This wine shows off the beautiful Eden Valley region in pure class, a region where the higher altitude and cooler climate compared to the Barossa Valley, produces an alluring elegance and finesse to the wines. This small parcel of Eden Valley Syrah was handpicked. The fruit was destemmed not crushed into small open top fermenters leaving 30% whole bunch clusters. The wine was aged in premium French oak puncheons.

Hand picked in Balhannah Adelaide Hills, the Cloud Series Alto Pinot Noir has been delicately hand sorted, basket pressed and contains 55% whole bunch. The Alto Pinot Noir is unfiltered to retain full flavour and settled in 30% new French oak from Nuits St George France, then rested in climate controlled storage for 12 months.
Balhannah provides the perfect cool climate environment for producing this elegant Pinot Noir, a wine that displays soft fruit tones and lightly spiced Burgundy like textures.

The Ciel Pâtissiere is a 2018 Vintage Rose Sparkling wine made in the traditional method. This method involves a second fermentation in the bottle to create the premium complex characteristics of a quality sparkling wine. This wine was aged for 3 years on lees to impart a rich, bready flavour to balance the beautiful freshness of the fruit.
