After spending 15 years working in some of the world's best restaurants alongside some impressively talented sommeliers, and having constructed hundreds of menus, many of which were carefully paired with outstanding wines from all around the world, I developed a love and passion for wine, especially as part of a meal. Having owned and operated Quoi Dining for over 5 years, I always had a dream to enter the wine making game and use my refined Chef's palette to carefully create a label that focused on quality wines to be enjoyed by everyone. CIEL wines was this next step in my career and has now been followed with my latest venture, the Ciel Rooftop Restaurant in Norwest. I hope you enjoy my wines as much as I have enjoyed producing them.
